Does Meal Timing Matter?

Most nutrition advice focuses on what goes onto the plate: vegetables, whole grains, protein, healthy fats and enough essential nutrients. But researchers are increasingly asking another question—could the time you eat also influence long-term health?
A study involving more than 30,000 U.S. adults found notable associations between the timing of the first and last meals of the day and the risk of death from cardiovascular disease and other causes.
The results suggest that consistently delaying the first meal until later in the day was associated with progressively higher mortality risk, while very late dinners were also linked to less favorable outcomes.
Importantly, the research was observational. It identifies associations but does not prove that changing meal times will directly extend life or prevent heart disease.
Why Meal Timing Is Being Studied
The body operates according to a roughly 24-hour internal clock known as the circadian rhythm. This system influences sleep, hormone production, metabolism, body temperature and cellular repair.
Modern habits can look very different from traditional meal patterns. Many adults skip breakfast altogether, while late-night eating has become increasingly common.
Previous research has suggested that irregular meal timing, missing breakfast and eating late at night may disrupt metabolic processes. The newer study examined whether those habits might also be associated with longer-term outcomes such as cardiovascular mortality and life expectancy.
More Than 31,000 Adults Were Followed
Researchers analyzed information from 31,044 U.S. adults aged 40 and older who participated in the National Health and Nutrition Examination Survey between 1999 and 2018.
Meal timing was recorded using in-person 24-hour dietary recalls rather than relying solely on participants to remember their usual routines over long periods.
The dietary information was then linked with mortality records through the end of 2019.
Participants were followed for an average of 8.6 years, allowing researchers to examine deaths from all causes as well as those attributed to cardiovascular disease.
Later First Meals Were Linked to Higher Risk
The researchers used eating the first meal between 7 and 8 a.m. as the reference point. Compared with this group, people who had their first meal between 8 and 10 a.m. showed a 10% higher risk of death from any cause.
When the first meal was delayed until between 10 a.m. and noon, the association became stronger: overall mortality risk was 19% higher.
In that group, the reported risk of related death was also 59% higher than among people who ate between 7 and 8 a.m.
The largest difference appeared among people whose first meal came after noon. They had a 29% higher all-cause mortality risk, while cardiovascular mortality was 43% higher compared with the reference group.
These numbers represent statistical associations, however, and should not be interpreted as evidence that eating breakfast at a particular hour directly causes or prevents disease.
Dinner Timing Showed a Different Pattern
Researchers also examined the last meal of the day. The lowest mortality risk was observed among participants who finished eating between 7 and 8 p.m.. Interestingly, both earlier and much later dinners were associated with less favorable outcomes.
Eating the final meal before 7 p.m. was associated with a 13% higher risk of death from any cause compared with the 7–8 p.m. group.
The strongest association appeared among people eating after midnight. Their overall mortality risk was 27% higher, while cardiovascular mortality was 51% higher.
This does not necessarily mean that an occasional midnight dinner is dangerous. Long-term eating schedules may be connected with many other factors, including work patterns, sleep, lifestyle, existing disease and socioeconomic circumstances.
Meal Timing Was Also Associated With Life Expectancy
Researchers estimated life expectancy among participants aged 50 and older. Compared with people eating their first meal during the reference period, having it between 8 and 10 a.m. was associated with approximately 0.9 fewer years of life expectancy.
Eating the first meal after noon was associated with a difference of about 2.5 years. For the final meal, eating before 7 p.m. was associated with around 1.2 fewer years compared with eating between 7 and 8 p.m. Having the last meal after midnight was associated with approximately 2.4 fewer years of estimated life expectancy.
Again, these figures describe associations within the study population rather than guaranteed changes for an individual person.
Why Earlier Eating Might Matter
One possible explanation involves circadian biology.
The human body processes nutrients differently depending on the time of day. Hormones involved in appetite, glucose regulation and energy use follow daily rhythms, and eating at unusual biological times could potentially interfere with them. Late eating may also overlap with disrupted sleep schedules or other lifestyle patterns that independently affect cardiovascular and metabolic health.
The study cannot determine exactly which mechanism explains the observed associations, and that is one reason researchers caution against treating meal timing as a simple prescription.
What Should You Take From the Study?
The findings add to growing evidence that nutrition may involve more than food quality alone. Meal timing could be another useful piece of the health puzzle.
But the message is not that everyone must eat breakfast at 7 a.m. and dinner at exactly 7:30 p.m.
Individual schedules, medications, health conditions, work patterns and sleep habits all matter. More importantly, an observational study cannot establish that changing the clock alone will reduce mortality risk.
A balanced diet remains fundamental. What this research suggests is that regular meal timing aligned with daytime hours may deserve more attention alongside what we eat.
For long-term health, the emerging picture is becoming broader: nutritious food matters, but when the body receives it may also play a meaningful role.
